Cocoa was used as a beverage over 2000 years ago by the Mayans, who, like the later Aztecs, used cocoa as a special occasion beverage, to reward brave warriors and as an aphrodisiac. The combination of gorgeously ginger flavours with our classic cocoa is a real treat for the palate to be enjoyed not only during the festive season. Columbus first brought cocoa back to Spain in 1502 to little acclaim but after Cortes conquered Montezuma and the Aztecs, he successfully introduced cocoa, transformed from bitterness with sugar or honey, to the Spanish court, saying “One of this precious drink allows a man to walk a whole day without taking nourishment. This additional cocoa butter, combined with proper tempering (the process of heating and cooling chocolate to control its structure) gives the chocolate more sheen, a ""snap"" when broken, and a smooth flavour.

A couverture chocolate is one that that contains a higher percentage of cocoa butter (about a third) than ‘eating’ chocolate. Although there are a few steps and stages, don’t let this put you off as there are a fair few long gaps between the major steps as you just let the ginger just do its thing. Take the ginger off the heat and pour the mix through a sieve over a bowl so you can cool and keep the lovely gingery liquid for pouring over pancakes, ice cream or porridge (you can bring it back to the boil to thicken a little). We soak slices of stem ginger in syrup until they're tender, then seal them in our house 70% dark for a zingy, richly satisfying bite. I used Pump Street Chocolate 85% cocoa Ecuador for mine, which has a depth and richness that’s a lovely match for the sweetness and spiciness of the crystallised ginger. Ingredients: Candied ginger (65%) (ginger (ginger, sugar), modified starch (potato, maize)), chocolate (35%) (cocoa solids (cocoa mass, cocoa butter), sugar, emulsifier ( SOYA lecithin), flavouring. Leave the chocolate until it has melted around the edges and then stir gently until all the chocolate is shiny and melted. Fiery spice beautifully compliments dark bitterness for a bar that offers a loving kick of unmistakable flavour.
